Mexican Summer Treats // Paletas de Fresa con Crema

Yield 10

3 cups strawberries, fresh or frozen

¼ cup orange juice

¼ cup milk

Zest of 1 lime or lemon

⅛ teaspoon salt

¼ cup heavy cream

⅛ cup sugar

In a blender, process the strawberries, orange juice, milk, zest, and salt, blending until smooth.

In a separate bowl, whisk together the cream and sugar for about 1–2 minutes, until the sugar dissolves. Add to the strawberry mixture and mix to combine.

Pour into 10 Popsicle molds and insert Popsicle sticks. Freeze until firm, 6–8 hours.

To easily remove the paletas from the molds, run the molds under hot water for a few seconds.
