Pre- fast foods // Watermelon Feta Salad

Serves: 4


3 cups cubed watermelon
2 cups cubed cucumber
1 (7-oz.) container cubed feta or Bulgarian cheese
¼ red onion, diced or sliced
Chopped mint, to garnish (optional)

¼ cup olive oil
½ lemon, juiced
½ tablespoon balsamic vinegar
Salt and pepper, to taste

In a large bowl, toss watermelon, cucumbers, cheese, and onions.
In a small bowl, whisk together oil, lemon juice, balsamic vinegar, salt, and pepper.
Pour dressing over salad and toss to combine. Garnish with mint, if using.
