Healthy Cookie Treats

These cookies take minutes to make and are a good source of protein and fiber to help keep you satisfied.

These cookies take minutes to make and are a good source of protein and fiber to help keep you satisfied.
⅓ cup PB2* mixed with 3 tablespoons water, or ⅓ cup peanut butter**
1 cup old-fashioned oats
½ cup mini chocolate chips
2 tablespoons honey
1 tablespoon chia seeds

Prepare a cookie sheet lined with parchment paper. Mix dissolved PB2
or peanut butter, oats, chocolate chips, honey and chia seeds. Wet hands slightly with water to form small balls or use a small ice cream scoop. Place on the cookie sheet and freeze for 2 hours. Store in an airtight container.

*PB2 powder is a low-fat and low-calorie alternative to traditional peanut butter.
**Using peanut butter will give these treats a richer taste.
Yield: approximately 14 balls
Serving size: 2 small balls or 3 mini balls
