16 ounces chopped romaine lettuce
2 scallions, chopped
Seeds of ½ pomegranate
1 mango, cubed
½ cup strawberries, sliced
½ cup diced kiwi or green apples
½ cup candied pecans

1 cup mayonnaise
½ cup sugar
¼ cup vinegar
1 (16-ounce) bottle  raspberry-walnut vinaigrette

  1. In a large bowl, toss together lettuce, scallions, pomegranate seeds, mango, strawberries, and kiwi.
  1. Toss with dressing (you won’t need all of it) and top with pecans.

Yield: 8 servings
