about 2 pounds riblettes (look for thicker ones)
olive oil, for drizzling
kosher salt, for sprinkling
black pepper, for sprinkling
3 garlic cloves, crushed
1-2 frozen chili cubes (depending on how much heat you like)

  1. Preheat oven to broil. Line up the riblettes in a baking pan. Drizzle both sides with olive oil and sprinkle generously with kosher salt and black pepper.
  2. In a plate, mash together garlic and chili. Lightly coat each riblette with mixture.
  3. Place bone side down in oven and broil for 7-8 minutes, until lightly browned. Remove pan from oven.
  4. Preheat oven to 325ºF. Cover pan tightly. Bake for 45 minutes to 1 hour, depending on desired doneness.
