Crush the pecans by placing them in a Ziploc bag and pounding. You can also pulse in your food processor, but don’t crush too finely as you want to have some bigger chunks.
4 (1½-inch wide) salmon fillets
Garlic powder, for sprinkling
3 tablespoons honey
3 tablespoons mustard
1 cup light mayonnaise
8-10 ounces honey-glazed pecans, crushed
- Preheat oven to 350ºF. Rinse and place the salmon slices in a baking dish.
- Lightly sprinkle each slice with garlic powder.
- In a small bowl, combine honey, mustard, and mayonnaise. Smear that mixture onto each piece of salmon, then coat each piece liberally with the honey glazed crushed pecans.
- Bake uncovered for 25-30 minutes. Be careful not to overbake, or salmon will be dry.
